952 places in this guide serve a meal and publish their hours. 258 of them are open by seven in the morning, about 27 per cent. If you surf, dive, fly early or simply have not adjusted yet, that quarter is the entire island as far as you are concerned, and no map or menu lets you filter for it.

Push the line back an hour and it thins fast: 47 places are open by six. There is a floor, and it arrives quickly.

What the group is made of is the interesting part. 156 of the 258 are cafés and bakeries against 102 restaurants. Cafés are 60 per cent of everything open early and only 33 per cent of the guide's meal places overall, so the early economy is close to twice as coffee-weighted as the island is.

That is worth knowing before you set an alarm expecting breakfast. At six in the morning you are looking for coffee and something baked, not a kitchen.

Places open by seven have a median Google rating of 4.70. Places that are not have a median of 4.70. Opening early predicts nothing at all about whether the food is good.

That is worth knowing mostly because of what it lets you stop doing: you can pick on the usual grounds and ignore the hour entirely. Early is a constraint on your morning, not a signal about the cooking.

It clusters the way the rest of the guide does. Canggu has 41, Ubud 30, Denpasar 25 and Pererenan 22, with Cemagi carrying 18 - high for its size, and worth knowing if you are staying north of Canggu and would rather not drive in for breakfast.

Early is the hour when everything you would normally lean on is shut. The villa desk is unstaffed, the cafe whose wifi you used yesterday is dark, and the place you are driving to may or may not have unlocked its door on time.

So you are checking a map, messaging a driver and looking up whether somewhere actually opened, all before anyone is awake to ask. That is a data problem rather than a planning one, and it is the one morning of the trip where borrowing a password is not an option.
